Juicy shrimp strewn across a tomato onion ragu followed by Feta cheese and black olives before broiling.

Meridians’ Lamb Chops with Red Pepper Potatoes

New Zealand lamb chops stuffed with roasted garlic cheddar cheese, sautéed, and then topped with a lightly spiced tequila wine sauce.

Caramel Lemon Chicken with Moroccan Potato Slices

Simple ingredients are blended with a technique that makes the ordinary extraordinary. Boneless chicken breast is sprinkled with finely chopped lemon and brown sugar before being drizzled with butter in a gratin. The whole is baked until a lemon caramel glaze coats the chicken.

Shrimp Tarte Tatin with Thyme, French Onion Rice

Seared in a cast iron skillet, large shrimp sandwich a layer of thyme stuffing, then a final dusting of garlic bread crumbs crisp in the oven.

Meridian's Stuffed Vegetable Platter

This platter incorporates multiple stuffed vegetables such as pink peppercorn rice stuffed tomatoes, Italian Bread Salad stuffed mushrooms, or spicy zucchini boats to accommodate our vegetarian guests. The vegetables will be chosen from the market each week so they are subject to change. We do use cheese, egg, and other dairy products for this platter unless we are told in advance to prepare it as a vegan platter.

Bacon adds richness to this chowder-style soup full of scallops, potato and tomato.

Fig Lamb with Lemon Marjoram Orzo

Sautéed lamb chops topped with fig jam and a medallion of Chévre, broiled to melt the cheese.

Chicken Richarde with Crisp Potato Gnocchi

Chicken breast stuffed with Jarlsburg Cheese and Smoked Pork Loin rolled around a German Dill Pickle! All topped off with a Béarnaise Sauce.

Mushroom Tarragon Salad

Mushrooms sautéed in tarragon green peppercorn dressing served warm atop a bed of romaine lettuce and vegetables finished with a sprinkle of Feta.
