Strawberry Spinach Salad
Raspberry vinegar
1 bag frozen raspberries
4-6 cups cider vinegar (distilled works too, just not as flavorful)
Let raspberries defrost then smash leaving some small pieces. Force raspberry mash into a jar with the vinegar. Let set at least 24 hours, shaking occasionally. The vinegar keeps well for a year or more.
Raspberry Dressing
½ C Raspberry vinegar
½ C canola oil
1 ½ tsp fresh minced onion
½ C granulated sugar
2 Tbsp sesame seeds
1 Tbsp poppy seeds
¼ tsp paprika (Sweet Hungarian, if you have it!)
¼ tsp Worcestershire sauce
Blend all in a food processor or blender until emulsified.
Strawberry Spinach Salad
Fresh baby spinach leaves
Red Onion, slivered
Strawberries, sliced
Walnuts, crushed
Toss ingredients together with Raspberry dressing.
